Semi-dried red peppers are seeded for purity, then crushed to create a fairly mild spice with robust flavor notes of fruit, chewy hints of raisin, cumin undertones, subtle notes of vinegar, and salt and slight floral fragrance. This mild pepper, with its heat building slowly, finishes on a slight sweet note. It works well with dishes that use ancho or crushed red pepper. Red Stamp Pepper has a Scoville rating of 8000.
