Story:  Native to the Eurasian continents, Fenugreek comes in many forms, including seeds, ground powder and leaves, all imparting a distinct flavor most easily relatable to curry powder, but in a more singular, simple fashion. Fenugreek seeds, difficult to grind at home, can be sprouted to release certain health benefits and an interesting texture.

UseFenugreek can be used in most Indian dishes, and in a pinch, can serve as a stand-in for curry powder. However, used on its own, Fenugreek’s soil-bound aroma and flavor enhance the intensity of earthy ingredients such as mushrooms, root vegetables, and roasted meats. When sprouted, use Fenugreek on sandwiches, in salads or as a garnish on any dish.
