Story: Native to the Eurasian continents, Fenugreek comes in many forms, including seeds, ground powder and leaves, all imparting a distinct flavor most easily relatable to curry powder, but in a more singular, simple fashion. Fenugreek seeds, difficult to grind at home, can be sprouted to release certain health benefits and an interesting texture.
Flavors: Bitter yet sweet, Fenugreek is instantly recognizable as a spice included in curry powder blends, but with a more earth-bound tone.
Use: Fenugreek can be used in most Indian dishes, and in a pinch, can serve as a stand-in for curry powder. However, used on its own, Fenugreek’s soil-bound aroma and flavor enhance the intensity of earthy ingredients such as mushrooms, root vegetables, and roasted meats. When sprouted, use Fenugreek on sandwiches, in salads or as a garnish on any dish.
