Flavor Profile
Story: Cinnamon is actually the bark of several different types of trees which are coppiced, or cut down to a stump. New shoots will form, and these can be harvested for their inner bark which, when dried, curl up into familiar cinnamon sticks. A little known fact-cinnamon is effective as an insect repellent.
Flavors: Cinnamon's flavor is known the world around: a sweet, deep aroma that brings a slight heat in large doses.
Use: Use in all the tradition ways: cookies and pastries, topping hot drinks, mulled into cider. Then try in more exotic dishes of the Middle East and India, sprinkle into sweet rice puddings, or swirl into Mexican drink Horchata.
